Good guacamole doesn't need much. Ripe avocados, lime, a little heat, and the confidence to leave it mostly alone. But a pinch of Algee kelp powder stirred through at the end does something quietly brilliant, it rounds out the acidity, adds a savoury depth, and makes the whole thing taste like you've been making guacamole your whole life. Ingredients
- 3 ripe avocados
- 1 lime, juiced
- ½ red onion, finely diced
- 1 green chilli, finely chopped (deseeded for less heat)
- 2 garlic cloves, minced
- 1 small bunch fresh coriander, roughly chopped
- 1 ripe tomato, deseeded and diced
- 1 tsp Algee kelp powder
- ½ tsp cumin (optional)
- Salt and black pepper
Method
- Halve and stone the avocados. Scoop the flesh into a bowl.
- Add the lime juice straight away to stop browning. Mash with a fork to your preferred texture, chunky or smooth, up to you.
- Fold in the red onion, chilli, garlic, coriander, and tomato. Add the cumin if using.
- Stir in the Algee kelp powder. It adds a subtle umami and mineral note that deepens the flavour without overpowering the freshness of the avocado.
- Season with salt and black pepper. Taste and adjust — more lime for brightness, more chilli for heat, more kelp powder for depth.
- Serve immediately with tortilla chips, warm flatbreads, or alongside tacos. Finish with an extra pinch of Algee kelp powder and a wedge of lime.
Notes
The kelp powder is the quiet hero here. It rounds out the acidity of the lime and adds a savoury backbone that makes this guacamole taste more complex than the ingredient list suggests. Make just before serving for the best colour and freshness. If you need to make it ahead, press cling film directly onto the surface to prevent browning.
